Method
- Mix the lamb mince, 1tsp paprika, herbs and diced onion. Shape mixture into meatballs.
- Heat oil in a large non-stick pan, brown meatballs in the pan for 5 minutes. Remove from the pan and set aside.
- Reduce heat and add the diced eggplant, onion, garlic, bay and rosemary. Cook for 5 mins, stirring occasionally.
- Add honey and tomatoes. Bring to boil, addthe lamb meatballs back to the pan, cook for another 4 - 5 minutes.
- Spoon on the fresh cheese, season with olive oil and fresh herbs. Grate over a little more cheese if you wish.
- Serve with pasta, couscous, steamed brown rice or a baked potato.
